For whatever reason, I have been craving lobster the last few days, so I finally caved and decided to treat myself to a lobster meal last night. However, not the typical lobster meal, as I didn’t want boiled lobster with a side of butter, baked potato & salad.
I wanted something with a little more substance, yet diabetic friendly so I decided to make lobster cakes and served it with a side of my infamous (in our house at least) kale salad with citrusy dressing (recipe link below).

Both the lobster cakes and the salad are fairly easy to make and does not require a lot of prep time.
This was a light and healthy diabetic friendly meal that I thoroughly enjoyed with a glass of champagne.
