Kale Salad with Citrusy Dressing

This salad is filled with fresh veggies, nuts and a little bit of fruit all of which are good for you as they are packed with protein, fiber, vitamins A, C, calcium and iron. It's an easy salad to make and delicious to eat!


5 cups kale (chopped)

1/8 teaspoon salt

2 cups broccoli (chopped)

1/2 cup almonds (sliced)

1/2 cup cheese (cheddar, shredded)

1/2 cup carrots (shredded) 1/4 cup red onion (diced) 1/4 cup sunflower seeds 1/4 cup cranberries Citrusy Dressing: 1/4 cup olive oil 2 tablespoons lemon juice

2 tablespoons spicy brown mustard or Dijon mustard

1 clove garlic (minced)

1/2 teaspoon dried oregano 1/4 teaspoon salt 1/8 teaspoon ground black pepper 1/2 teaspoon Stevia

Instructions: 1. Make the dressing by combining all ingredients above in a bowl and whisk until well blended. Set aside. 2. In a large bowl, combine kale, broccoli, almonds, cheese, carrots, onion, sunflower seeds, cranberries. Whisk dressing again and pour 1/3 cup of the dressing over the salad. Toss to coat and add extra dress to taste.
