Scones for the Road: Mother Daughter Road Trip!

This past weekend, I had the pleasure of taking our daughter Kennedy on a college tour at Hofstra University in Hempstead (Long Island), New York. It is a three-hour drive (one-way) from where we live. Because of the amount of the time, we had to drive and because we wanted to avoid eating fast food, I prepared these yummy granola scones.

The granola scone is not the typical scone, they are hearty, delicious, and filled with dried fruits, nuts, coconut, oats, and seeds. It’s like eating an amplified oatmeal raisin cookie that is in the form of a biscuit!




While we munched on our granola scones, we jammed to Neo Soul music, I am grateful that our kids enjoy some of the same type of music that we do. Kennedy and I talked about everything, laughed about everything, and simply enjoyed each other’s company.


Hofstra University’s campus is a beautiful one. It is much bigger than we anticipated. The weather was perfect for being outdoors and we certainly got our steps in. Here are a few snapshots that I took during the tour.













Our journey back, we were still full from the scones and coffee’s we grabbed from Dunkin Donuts, so we listened to 70’s R&B classics, talked and laughed some more and made our way home.

All-in-all it was a GREAT day very well spent with our daughter.
