I woke up this morning craving pizza! I love pizza, but I choose not to eat the type of pizza that I used to due to my diabetes. As with everything now, I must come up with healthier versions of the things that I used to eat and not think twice about. Now I triple and quadruple think things as I plan out my daily menus.
As I was researching healthy pizza toppings, I came up with this healthy hummus flatbread pizza that includes spinach, sun-dried tomatoes, pesto, and pine nuts … yes, pine nuts!
For the side, I found this wonderful superfood salad kit at my local grocery store. The leafy greens include kale, broccoli stalk, cabbage, brussels sprouts and chicory, dried cranberries, and pumpkin seeds. The kit came with a poppy seed dressing, but I chose to use a balsamic vinaigrette instead for my serving.
Not only is this meal good for me; but also, for my vegetarians in the house (Anthony & Kennedy). They can enjoy this meal too!
